1, raw material treatment: take 5 Jin of soybeans, peel them, screen them, wash them, and soak them in a water tank. The soaking time must be controlled well, not too long. Put 250 grams of raw ruby paste in the fire and bake. The roasting degree of gypsum must be mastered. Knock the plaster lightly with a hammer, and see that it has just been burned.
2. Grinding beans and filtering slurry: Soak soybeans, take them out, grind them according to the ratio of 1 kg soybeans and 6 kg water, put the ground slurry into a bag, pinch the mouth of the bag tightly, and forcibly squeeze out soybean milk. Don't mix bean curd residue with soybean milk when squeezing pulp.
3. Boiling: Pour the squeezed raw pulp into a pot to boil, and skim off the foam on the surface. The fire should not be too big to prevent the soybean milk from overflowing after boiling. Grind the burnt gypsum into powder, mix it into gypsum slurry with clear water, pour it into the soybean milk just scooped out of the pot, and gently stir it with a spoon. Later, soybean milk can be concentrated into tofu flower.
4. Water-made tofu: After the tofu flower solidifies for about 15 minutes, gently scoop it into the wooden pallet covered with cloth, and then wrap the tofu flower with cloth for 10 ~ 20 minutes, and it becomes water-made tofu.
5. Making dried beancurd: Spoon the bean curd flower into a wooden tray, wrap it with cloth, cover it with a wooden board, pile up stones, and press all the water to make dried beancurd.
