If you say probability theory, that person feels that there are actually many math departments. Of course, many professors are double-hired by the Department of Mathematics and Statistics. The following are some schools I have learned.
Stanford: All probability professors are employed by math/stat (Persi Diaconis, Amir Dembo, Sourav Chatterjee);
UC Berkeley: Most probability professors are engaged in math/stat (David Aldous et al. ), but Allan Sly is currently only affiliated to the statistics department;
MIT: It's all under the department of mathematics because there is no department of statistics at MIT (Alexei Borodin, Scott Sheffield, Alice Gionett);
NYU: Under Courant College, it should actually be the Department of Mathematics (Gerard Benarous, Eyal Lubetzki, Paul Bourgade);
Columbia University: Under the Department of Mathematics, but there are also many professors who are part-time (Ioanes Caraza, Julian Dubdat, Ivan Cowen, andrei okounkov if he also does probability theory) ...), but there are also some professors who do applied probability under the Department of Statistics and or;
U Chicago: Both of them are employed by the Statistics Department of the Department of Mathematics (Steven Alley, Greg Lawler, Ding Jian);
Princeton: It seems that there are not many probability professors. They should mainly belong to Orfe (Operational Research and Financial Engineering) department (Ramon van Handel, Mykhaylo Shkolnikov). PACM may have a probability teacher, but I don't know much about it.
In addition, the probability theory of U Washington, northwestern and other schools is also under the department of mathematics, and most of Brown's probability theory professors are under the department of applied mathematics, DAM. If probability theory is applied, many professors will be in the OR departments of various schools.
Finally, Mircosoft's theory group also has a Daniel doing probability theory, which seems to be able to take doctoral students in Washington.
