Methods and steps:
1. Wash the trotters and blanch them in a pot for later use.
2. Put the pig's trotters in the saucepan and add more than half of the water.
3. Add a proper amount of cooking wine, soy sauce, onion ginger, pepper, pepper, star anise, fragrant leaves and tsaoko, and simmer for 2 hours after the fire is boiled.
4. Prepare the pot, add sugar or rock sugar, and cook for a few minutes on high fire to make the soup thick and bright.
