Detailed operation steps are as follows:

Preparation of pepper and chilli oil. Put oil in a hot pan, put some chopped dried peppers (6 to 7) and pepper at an oil temperature of about 70℃, fry them and take them out.

Make spicy seeds. Take some dried Chili noodles, add a little salt, thirteen spices and pepper powder and stir well. Heat the hot oil in the pot to about 70℃, pour in the Chili sauce noodles, stir-fry the Chili sauce noodles, and pay attention to controlling the oil temperature and quantity. The oil pepper should not be too thick or too thin, so as to be used for subsequent cold dishes.

Carrots in cold salad. Shred carrots, blanch in boiling water for a while (not too long, so as not to soften carrots and affect the taste), take out and put them in cold water, and then drain. Put the drained carrots into a vegetable bowl, add shredded onion and shredded green pepper, and stir well.

Cold shredded potatoes. It's the same as cold-mixed shredded carrots. Shred potatoes, blanch in boiling water (not too long, so as not to soften the potatoes and affect the taste), remove them and put them in cold water, then drain.

Cold bean skin. Do the same thing as above. Shredded bean skin (originally cooked). Don't scald with boiling water, or it will be too soft.

Bake buns. Bake Baiji steamed bread/coarse steamed bread/sesame seed cake with a pan or electric baking pan over low heat to make it crisp.
