5S are SEIRI (sorting), SEITON (rectifying), SEISO (sweeping), SEIKETSU (cleaning) and SHITSUKE (literacy). Because its five contents, Romanization of Japanese, all start with "S", it is called 5S.

In fact, 5S originated from a household disposal in Japan, and it has been circulated among Japanese people for 200 years. Firstly, two S's are put forward: sorting and rectifying, which mainly aims at the reasonable classification and placement of "things".

After World War II, Toyota introduced it into the internal management operation of the enterprise. Due to the improvement of enterprise management demand and level, three other "S" have been added, forming the "5S" activities widely implemented today. It is the simplest, most basic, most important and most effective field management method. The production site of Japanese enterprises is famous for its neatness, orderliness and high efficiency, all of which are attributed to the excellent management methods widely adopted by Japanese enterprises.

In Hong Kong and Taiwan, 5S is vividly called "Five Regular Laws": regular organization, regular rectification, regular cleaning, regular standardization and regular self-discipline. In Hong Kong, the five-routine method is widely used in government agencies, factories and hospitals, especially in service industries, such as large restaurants, chain fast food restaurants, hotels, supermarkets and libraries.

In Chinese mainland, Haier Group's "6S Big Footprint" is also a household name. However, most of the enterprises that implement 5S management are manufacturing enterprises, few are service enterprises, and even fewer are catering enterprises. With the continuous enhancement of quality, safety and brand awareness of catering enterprises, it is believed that 5S will be valued and applied by more catering enterprises.

Application of 5S in catering industry;

1, constant organization

Senior leaders should attach importance to it, give strong support in human, financial and material resources, establish a perfect organization and promotion mechanism, formulate a perfect implementation plan and time schedule, repeatedly emphasize the benefits brought by the implementation of the five permanent members to the growth of life and hotel management, gain the recognition and commitment of employees, and make them actively participate in the practice of the five permanent members. Regularly take time to train P5' s theoretical knowledge, watch VCD cases, increase employees' knowledge and understanding of P5, reduce misunderstandings at work, hold prize-winning competitions, and improve employees' enthusiasm for participation.

2, often rectify

Quantify and locate the people, things and things needed. After the completion of the previous step, scientifically and reasonably arrange and place the items that need to be left at the production site, obtain the required items as quickly as possible, and complete the operation under the most effective rules and regulations and the simplest process.

The main points of this rectification activity are:

(1) Items should be placed in a fixed place and area, so as to facilitate searching and eliminate mistakes caused by confusion;

(2) Articles should be placed in a scientific and reasonable place. For example, according to the frequency of use of articles, things that are often used should be placed nearby (such as the work area), and things that are occasionally used or infrequently used should be placed far away (such as centralized storage in a certain place);

(3) Visualize the placement of items, so that the quantitative loaded items can be counted in a few days, and the areas where different items are placed are distinguished with different colors and marks. Reasonable placement of articles in the production site is conducive to improving work efficiency and product quality and ensuring production safety.

3. Wash frequently

Clean the workplace, repair the equipment immediately if it is abnormal, and make it return to normal. Dust, oil, garbage, etc. Will be produced in the production process of the production site, thus making the site dirty. Dirty scenes will affect people's working mood and make people unwilling to stay for a long time. Therefore, it is necessary to remove those dirt through cleaning activities and create a bright and comfortable working environment.

The main points of cleaning activities are:

(1) Articles for your own use, such as equipment and tools. Clean yourself, don't rely on others, and don't add special cleaners;

(2) Equipment cleaning, focusing on equipment maintenance. Cleaning equipment should be combined with point inspection of equipment, that is, point inspection and repair; Cleaning equipment should be lubricated at the same time, and cleaning is also maintenance;

③ Cleaning is also for improvement. When cleaning the ground and finding sundries and oil-water leakage, find out the reasons and take measures to improve them.

4, often specification

Standardize some excellent working methods or concepts of hotels, formulate a set of effective working standards and rules and regulations, and often organize employees to study.
